Siu yuk 燒肉, as it’s known in Cantonese, is one of Southern China’s all-star foods. Crackly, bubbled skin gives way to jiggly fat and tender meat—it’s a total mouthgasm in a single bite. Whether it’s served pūpū-style, plain over rice or in a bowl with glistening cubes of ‘ahi poke, it’s not hard to find good roast pork on O‘ahu.
